Roast chicken thighs with lemon

Ingredients
- 4 chicken thighs (with bone in)
- 1-2 lemons
- 1 tablespoon olive oil
- 2-3 sprigs fresh rosemary or 2 tablespoons fresh thyme roughly chopped
- 1 bulb garlic, halved (optional)
Method
- Preheat oven to 200 degrees Celsius (180 fan forced)
- Put chicken thighs in a bowl with the lemon juice and oil. Add the rosemary or thyme and season with sea salt and lots of ground black pepper. Toss well.
If you have time, cover and leave to marinate in the fridge for at least 1 hour and up to 4 hours.
- Place the chicken, skin-side up, in a roasting tin with the herbs and quartered lemon, if using, and bake for 15 minutes.
Remove the tin from the oven, add the garlic, if using, and cook for a further 20-25 minutes, or until the chicken is lightly
browned, tender and cooked all the way through.

Makes enough for 4.
