Cockles
Introduction
Ingredients
- 115 g plain flour
- 115 g corn flour
- 115 g sugar
- 115 g butter
- 2 eggs
- 1 level teaspoon baking powder
- pinch of salt
Method
Beat butter and sugar together, break in 2 eggs, one at a time and mix well. Add other ingredients. Drop in small teaspoons on a buttered tray and bake at 220 degrees for around 10 mins. Stick two together with jam. Top with pink icing and sprinkle with coconut.
Makes approx ? cockles
