Introduction
Michael loves making these with his Mum and he likes eating the mixture
before it's cooked.
Muffin
Ingredients
- 2 Cups of Self raising Flowers (roses, blossoms, whatever you want)
- ¼ Cup of sifted Cocoa powder
- ½ Cup of Castor sugar
- ½ cup of activated walnuts Chopped
- 1 egg
- 1 cup buttermilk
- 1 cup mashed banana
- 1/3 cup of canola oil
- 1 teaspoon vanilla essence
Method
- Preheat oven to 180 degrees and lightly grease a muffin tray.
- Mix flour, castor sugar, and cocoa powder in a bowl, then stir in
walnuts. In a separate bowl , lightly whisk eggs with the buttermilk,
canola oil, vanilla essence and Banana. Pour the wet mixture into
the flour mixture and mix lightly until just combined. Spoon the
batter into the prepared muffin tray.
- Bake for 25-30 minutes or until the muffins spring back when lightly
pressed. Remove the muffins from the oven and turn out onto wire tray
and allow to cool.
Makes about 20 medium size muffins
Time: allow 15 minutes preparation and 20 minutes cooking time.
